Cucumber Tomato Relish
- 1 cup cucumber, diced
- 1 pound tomatoes, peeled and diced
- 1/2 cup sweet onions, thinly sliced
- 1/4 cup oil
- 2 T apple cider vinegar
- 2 T sugar
- 1/2 teaspoon salt and 1/4 teaspoon pepper
- 1 Tablespoon chopped basil
- Whisk together until sugar dissolves and dressing begins to thicken. Salad will keep refrigerated up to three days.
- Combine above ingredients in medium bowl. Add dressing below, starting with half and add more to taste.
