Grandma’s Zucchini Relish

This recipe makes about 8 pints! 

Ingredients
12 c. ground zucchini
2 c. ground onion
3 c. ground carrots
1 red pepper, ground
1 green pepper, ground
5 T. salt
4 c. sugar
1/2 t. ground mustard
1/2 t. black pepper
2 t. turmeric
2 1/4 c. vinegar
2 t. cornstarch

Instructions

  1. Mix together first 6 ingredients, cover with water and let stand overnight.
  2. Wash 2 times in cold water.
  3. Add vinegar, spices, sugar and cornstarch.
  4. Mix and cook 8 to 10 minutes.
  5. Seal in jars while hot.
