Italian Spaghetti Squash
Spaghetti Squash can be used for more than just spaghetti! This delicious meal would make enough for a family of 4. You might want to double this if you are feeding some hungry teenagers!
1 large spaghetti squash, halved
2 tbsp extra-virgin olive oil
1/2 lb. ground sausage
1 cup spaghetti sauce
3/4 c. shredded mozzarella
Preheat oven to 425 degrees F. Halve the spaghetti squash, scoop out the seeds and discard of them. Rub the insides of the squash with olive oil. Bake until the squash until it is tender, which will be about 45 minutes. Remove from the oven and heat the broiler.
Cook sausage until browned. Then add your spaghetti sauce and heat. Once your squash is cool, shred with a fork. Add your sauce/sausage combination among your halves and top with cheese. Broil until cheese is browned or about 4 to 5 minutes. Serve hot and enjoy!!
