Sausage Goat Cheese Zucchini Skillet

We made this recipe this week, and it was really great.  So quick and easy.  It is a great way to make zucchini with a new twist.  The goat cheese really makes the recipe…you could possibly try feta if you don’t have goat cheese.

3 tablespoons of real butter
3 small or 2 large zucchini/summer squash, thinly sliced
1/2 medium onion or 2 baby onions, chopped or 1 chopped garlic scape
1/2 lb ground Italian sausage (we used 1/2 package of The Pork Shoppe Italian sausage we sell in the Farm Store)
6 oz goat cheese
1/2 cup Parmesan cheese, shredded
salt, pepper, Italian seasoning to taste
In one skillet brown the Italian sausage. In another skillet, mix butter, zucchini slices, onion. Cook over medium heat until zucchini is well slightly browned and onions are clear. Mix sausage into skillet. Lightly season with salt, pepper, Italian seasoning Turn off heat. Take goat cheese and spoon into dollops on top of mixture. Sprinkle Parmesan cheese on top. Do not stir. Serve onto plates and enjoy!
