Stuffed Tuttle’s Peppers
3 green Tuttle’s peppers
1 pound ground beef
1/3 cup rice
1/2 cup tomato juice (Want to make your own juice? Click here to learn how to can your own from Tuttles tomatoes!)
1/4 cup diced onions
Cut your fresh peppers in half. Remove seeds and ribs. Mix rice and onions into beef. Fill each pepper half with beef mixture and set in a saute pan. Pour water into the bottom of the pan until theres between a quarter and a half inch of water. Top the peppers with tomato juice (or sauce!). Heat until the water begins to boil and then continue to simmer on low for about an hour or until beef is cooked all the way through (use a thermometer if you aren’t sure).
We ate our stuffed peppers with corn fritters that night. I laughed when my husband said he was making them because I didn’t believe they were a real thing… turns out they are real and delicious! Click here to see our recipe!
